Ramagosa in the Pocono's and had this with fresh New Jersey corn.
It was delicious..
|My notes: The fresher the corn, the better!|
6 ears cooked corn
2 zucchini, thinly sliced (I chopped it)
2 bunches scallions, chopped, white only (I put more green in than white for my wife)
½ red bell pepper chopped
¼ cup finely chopped parsley
¼ lime juice
1 teaspoon Dijon
1/3 cup olive oil
Salt & pepper
