CHIVE BUTTER

Serves 4

3 tablespoons softened unsalted butter
1 ounce crumbled blue cheese
1 tablespoon chopped fresh chives
1/8 teaspoon black pepper.

Mash together above. Serve on flat iron steak that has rested about 10 minutes after slicing.
