1 large onion
2 cloves garlic
1 teaspoon ground cinnamon
1 teaspoon dried oregano
1 teaspoon ground cumin
1 lb. extra lean ground beef
14.5 oz. can recipe ready diced tomatoes in juice "Petite"
2 tablespoons tomato paste
1/4 cup dark seedless raisins
1/3 cup stuffed green olives
1/2 teaspoon salt
3 cups hot cooked brown or white rice (we use white)
Recipe said to lightly coat large nonstick skillet with cooking spray. I do not spray anything on my non stick skillets. Recommend you use a little bit of olive oil on medium heat. Add finely chopped onion, cook until softened about 3 to 4 minutes.
Add finely choped garlic, cinnamon, oregano and cumin. Cook 30 seconds.
Add beef and cook stirring to break up clumps of meat until the beef is lightly browned (about 3 - 5 minutes).
Stir in tomatoes with juice, tomato paste, raisins, sliced olives and salt. Heat to boil over medium high heat stirring occasionally.
Lower heat, cover and simmer, stirring occasionally for 30 minutes. Serve over rice.
